Homemade Chicken Broth

Today I made a whole chicken in the crockpot that we raised ourselves for a dinner recipe. I had a ton of juice just sitting in the bottom so decided to make homemade chicken broth. The juice from the chicken is liquid gold and I couldn't let it go to waste especially since we raised the chicken ourselves.
My easy chicken broth recipe:
bone and skin of chicken, whatever is leftover
onion, quartered
two carrots, cut into 3 inch pieces
1 handful of fresh parsley including the stalks (1 tsp of dried)
2 tsp fresh thyme (1 tsp of dried)
1/2 tsp salt
1/2 tsp pepper
water to cover
I like to use a large cast iron dutch oven. Bring to a boil and let simmer for 3 to 4 hours. Let cool for an hour or more. Strain into glass container or freezer bags to store your chicken broth.
It is really special to make such amazing chicken broth out of a backyard chicken we raised and fresh herbs we grew in our little garden. Also, to clarify I really made more of a chicken stock since I included the bones. So maybe it's a homemade chicken stock recipe, but the name aside its delicious!
